Thaumatin is a white crystalline powder, amorphous, odorless, sweet and refreshing, and lasts for a long time. The sweetness is extremely strong, and the average sweetness is 2500～3000 of that of sucrose. Easily soluble in water, soluble in 60% ethanol, insoluble in acetone. It has a synergistic effect and flavor-improving effect when shared with sugar Sweeteners. The sweetness of thaumatin is stable in the pH range of 2-10 and heated below 100°C (or ultra-high temperature instantaneous sterilization above 100°C), and it is also stable to acid.
